I am so far behind and just can't stay up on the blog, but been busy with work and having some visitors!  I'm hoping to at least get his 9-month post up soon, but in the meantime here are a couple cute pics:

Slow Cooker Buffalo Chicken Part 2

A few weeks ago I posted about some yummy crock pot shredded buffalo chicken I made.  We made it again, but instead of sandwiches, used it for some other dishes!  It's great cause they all primarily use the same ingredients, so it's a good way to use up the pot of chicken with some variety.

First up, we did some Buffalo Chicken Nachos inspired by something I pinned on Pinterest.  I put a bunch of Nacho chips in a 9x9 dish and spooned some of the shredded chicken over the chips.  Next, I just spread shredded mexican blend cheese and blue cheese crumbles on top of that.  I put in the oven at 400 degrees for a while until bubbly and hot.  I then drizzled with blue cheese dressing and green onions.

Next, we did a Buffalo Chicken Pizza.  I decided we really need to have more pizza nights cause this is so easy and so good!  I used a Pillsbury pizza crust and spread that out on a cookie sheet.  I then spread a layer of Frank's Red Hot Buffalo Sauce.  I then spread shredded mozzarella cheese and then dropped spoonfuls of the shredded chicken.  I baked according to the directions on the pizza crust.  I topped with green onions once out of the oven and used the blue cheese dressing as a dip.

Hand-me-downs

Even though Lachs is our first kid, he has a few hand-me-downs that were actually mine!  The latest is this little blue/white striped romper that supposedly my sister and I wore and then 2 of my boy cousins wore...and now it was Lachlan's turn.  Dustin thought it looked way girly, but I thought it was fine.  We went to the backyard and took some pics of him just relaxing.  He didn't care to look at the camera much and was always interested in what was going on in the other direction!

On the Move!

Well, Lachlan is very hesitant and only will "crawl" if an object is somewhat close, but we've had many instances the last few days where he will go get one of his toys.  I caught the following on the iphone which happens to be the farthest that he has crawled yet!  Actually, the term crawl may be a little stretch as it kinda looks more like a hobble though.

Pizza Casserole

This was a Betty Crocker recipe everyone was pinning on Pinterest and it seemed just too cheap and easy not to give it a try!  Only 4 ingredients and took me 5 minutes to assemble.  And the best part was that it tasted great, so we'll definitely be having this again!  I had made a version similar to this a couple years ago, but it used Pillsbury refridgereated biscuits....and this was 10 times better!

Ingredients:
2 7.5 oz pkgs Bisquick complete mix
1 14 oz Jar Pizza Sauce (although I used part of a 2nd jar cause we like ours extra saucy!)
Pepperoni
2 cups shredded Mozzerella


Directions:
Preheat oven to 375 degrees.  Spray 9x13 pan with nonstick spray.  Mix the 2 packages of bisquick with 1 cup of water.  Using about half of the dough, glob spoonfuls of it on bottom of the pan.  Don't worry that the dough is not forming an even layer or covering the entire bottom.  Next use about half the sauce and pour over the dough.  Next, layer half the pepperoni followed by half the cheese.  Repeat all layers again.  Here is what mine looked like as I put the dough on for the second layer:

Bake for 25 minutes.  Cut into squares and enjoy!
